I have been making Cameroon fish rolls(also called spring rolls)  for a couple of years now and every time anyone and everyone tastes this delicacy, they always come back for more. I will save the many testimonies about how delicious the fish rolls are so that you can try it out. Despite the fact that I also accept orders to supply rolls for various occasions (weddings, christenings etc.),  yet I release my Cameroon fish rolls recipe!

What you need for the dough

1kg all-purpose flour

 A pinch of baking powder (less than a 1/8 teaspoon, a pinch)

A bit of yeast (less than a 1/8 teaspoon, a pinch)

3 teaspoons of sugar

2 teaspoons of salt

1 cup  vegetable oil (236ml)

½ liter of lukewarm water

For the filling

3 tins of mackerel fillet in oil

1 medium sized chopped onions

¼ a cube of bouillon (Maggi)

White pepper(optional)

1 small carrot (optional)

2 liters of vegetable oil for deep-frying

If you have assembled all of that, let’s proceed to see how to get it done

It is wise, to begin with, the filling.

 

How to make the filling:

Open the tins and drain the mackerel in a colander

Cook the chopped onions and the grated carrots for about 3-5mins

Pour in the mackerel and mix

Sprinkle some white pepper as well as the bouillon.

Allow it to cook for about 3mins, then let it cool.

While this is cooling let’s get the dough ready…

The dough:

Put the flour in a bowl and throw in your salt, sugar, yeast, baking powder and mix everything

Add in the glass of vegetable oil immediately followed by some lukewarm water.

Knead thoroughly till the dough is smooth, elastic and no longer sticky! If by some means you feel the texture is too soft you could sprinkle a bit more flour.

That’s it!

The story is not over yet… time to do the rolls

Cut into small balls

And simply roll it out

Place in little quantities of the filling and roll on a greased board

Place the rolls on a greased tray to avoid any sticky business

 Okay that done! no time to wait…

Finally deep fry on low to moderate heat until you see it turn golden brown. Remove and allow to cool.
