This is one of those dishes that I so planned I will make more available to my kids in my adult life, just because we hardly had enough of it while growing up. Poulet DG was only served on very special occasions in my home; when we were expecting very ‘important’ people. In short it wasn’t a common meal!  I do not know why it is called poulet DG (Director General according to most Cameroonians). But I guess only the ‘rich’ could afford it on a regular basis. Poulet DG is heavenly delicious and no one should be deprived of this goodness!

It is a one-pot meal of plantains and chicken, stewed in tomatoes and lots of assorted veggies.

What You need:

  • 2 medium size onions
  • 3 whole chicken legs cut into small pieces
  • 4 fresh tomatoes (chopped)
  • 4-5 semi ripe (ripe if you prefer plantains)
  • 1 teaspoon of ginger paste
  • 1/2 teaspoon of garlic paste
  • 2-4 seasoning cubes
  • 3 chopped carrots
  • A cup of sliced green beans

  • bell pepper (paprika)
  • salt to taste
  • 1/2 cup vegetable oil.
  • 2 chopped parsley leaves
  • white pepper

Method

Cut plantains into desirable pieces, bake and set aside. You can fry if you prefer, but I will rather bake than fry.

Season chicken with some ginger, garlic, 1 seasoning cube, and some white pepper

Steam the chicken for about 10 minutes and then grill in an oven for 15 minutes

Proceed to making the stew:

This stew is quite similar if not the same like that for potato hot pot

You begin with frying the onions, add in the chopped tomatoes and let them fry together for about 10 mins. Add in ginger, garlic, carrots and green beans. Let them cook for 5 mins. Then pour in the bell peppers as well as 1 or 2 seasoning cubes alongside some stock you reserved from steaming the chicken. This will give it an extra liquid to get the vegetables cooked.

Finally throw in the grilled chicken, baked plantains and mix carefully till every item aligns itself in perfect harmony.

Just one more thing, throw in your parsley and just let that goodness stand for a minute et voila! Your poulet(chicken) DG is ready!
