I remember eagerly waiting for the lunch break bell to ring  I could rush to the dining shed and buy some groundnut sweet as we called it. Those vendors sure knew how to keep the kids rushing for these candied peanuts. There is just a lot you can do with peanuts. This is the first in the series of ways I will be consuming them this year

GROUNDNUT SWEET/CANDIED PEANUTS/ ARACHIDES SUCREE

Wait! Seriously guys this is the groundnut sweet of groundnut sweets! If you have never made some before then you are exactly the person I am putting up this recipe for. It is rondiculously e-a-s-y! Yet so so good, sweet and simply irresistible. However, I don’t know exactly what makes is so addictive, maybe the sugar coat?

Ah talking about sugar, I made a resolution some years ago to take a sugar fast every week. I only kept my resolution for a week, they are just hard to keep. That’s one of the reasons why I don’t do new year resolutions. With the ever increasing rise in health-conscious foodies; a little-candied peanut indulgence won’t hurt.

Now let’s make some groundnut sweet if you prefer to call it arachides sucree or candied peanut, it is perfectly fine!

These are peanuts coated with sugar. Groundnut sweet/candied peanuts are crunchy, sweet and packed with nutrients. Infused with cinnamon and a coconutty hint

Instructions
  1. Pour groundnut into a skillet and roast over medium heat for 6mins, stirring constantly to ensure an even roast
  2. Pour water into a pan, add in sugar, cinnamon, groundnuts and bring to boil
  3. Stir continously when it begins boiling. Continue stiring till it forms a crusty, sand like particles. Remove and pour out on a baking parchment paper or a tray.

  4. While it is cooling, you can sprinkle some coconut powder if you love the coconut flavour et voila! let it just cool and what else? Enjoy, make sure to store the rest in an airtight container to snack on later.

PS: You can equally roast the peanuts in a preheated oven at 180 degrees Celsius.
