I can’t get enough of this coconut sweet or coconut chips. It’s the perfect healthy snack of all times! The little tiny chips simply disappear without you noticing. I must admit

that I can’t resist anything coconutty.

Coconut is such a versatile fruit. Talking about it being a fruit, we had varied opinions in my home, a fraction thought coconut is a fruit. Another camp thought it to be a nut. But Google is always helpful in such time, we are told it is both a fruit and nut.

Interestingly, every part of this fruit matters! You can use the shells to make some fire if you cook with wood. The water makes for a delicious drink and the coconut itself has thousands of uses. It is part of our daily cuisine. For baking, the milk, the oil… what can we do without coconut these days?

Coconuts are an excellent source of fiber, vitamins C, E, B1, and some minerals like Calcium, Iron and Magnesium.

I tend to add a little coconut to most of my recipes. Shredded Coconuts are a great base for quite a number of recipes. Have you tried my mini African cookies? (chin chin) I substituted the regular whole milk with coconut milk, it was a hit!
